It’s old now, but ‘The Witching Hour’ by Anne Rice has an incredible female lead, Rowan Mayfair.
There are some romance genre elements in the book though.

It’s totally not devoid of romance but the romance element is very minimal

This is actually a hard one! Quite disturbing how difficult it is to come up with something like this for a younger person (can think of some with older mature women, but the fact that books about older women can be about other things than romance, but not books centering on younger women is also telling.). Going to keep watching this list I think I want to read these books.

Seveneves – Neal Stephenson – a science-fiction books featuring mostly strong female character
Monstrous Regiment – Terry Pratchett – fantasy satire
Weird Sisters – also Terry Pratchett
Drunk on all your strange words – Eddie Robson
The Girl with all the Gifts – zombie story several strong female characters – M. R. Carey

I’d like to recommend the book Lessons in Chemistry by Bonnie Garmus. It talks about the story of a strong female character taking place in the 60s. Was an excellent read
I didn’t find it laugh-out-loud funny as the book description claims it to be. Apart from that it was inspiring to a woman find her way through life in her male dominant world despite the disparaging comments

This is actually a hard one!
