Books with similar trope to Hannibal and Strangers from Hell

My ultimate favorite trope of is a seemingly ordinary character just trying to get through life and fighting their own demons, only to be violently and so not gracefully swept and have their life turned upside down by a relentless, deranged psychopath who's completely infatuated by them and has a singular goal of tormenting them until their breaking point and releasing the maddness within them.
I found this in shows and movies like Hannibal, Strangers from Hell, The Merciless, Killing Eve.
I know some of those don't fit, extactly, but hopefully you get what I mean. This kind if character development/derangement.
It doesn't need to be dark romance or romance at all, anything with this trope is fine.
