It doesn’t necessarily mean a book is your favourite, but to remember detailed portions of a book years and years later just because it had an impact is something that can be quite rare.
One of mine is House of Stairs by William Sleator, a young adult psychological study that reads more like a subtle horror novel. The ending and very detailed scenes from the book have stayed with me for over 20 years. If you haven’t ever read it, I would recommend giving it a try.
The other is Do Androids Dream of Electric Sheep by Philip K. Dick. Without any spoilers, I remember exactly why the title references sheep and what happens to said sheep… In addition, the trippy ending is something that hit me pretty hard. I can’t say I liked the ending, but it definitely had an impact.

My Side of the Mountain by Jean Craighead George
You just reminded me of Sleator’s *Interstellar Pig*. I read it as an adult, but it stayed with me.
From childhood, the Pippi Longstocking books stayed with me. And *The Little Engine That Could*. Those early books are really formative, lol!
