After the Fall by Gerry Gainford is a solid post-nuclear apocalypse American road trip. It’s a bit more recently-apocalyptic (all characters can remember beforehand, and some are still trying to find missing loved ones) and grounded than either of those, but still pretty wild.
Black Mad Wheel by Josh Malerman is about an actual desert in the 50s instead of the future, but it’s zany as hell.
I’m certain there are tie-in novels to those properties, and some licensed fanfic is actually good. People don’t tend to rec it, which can be a shame. I’m not familiar with any set in wastelands myself though, sorry.
