I'm a little specific with what I like, so bear with me. I really enjoy fantasy novels that are believeable or feel real to some extent. I've noticed most of the ones I like are built on some kind of mythology or an established belief system.
In terms of romance, I'm okay with it, but don't really like when it takes away from character depth, or inhibits the story in some way.
I do also really enjoy mystery books in general. I haven't really come across one I didn't like.
I really enjoyed the Percy Jackson series as a kid and am currently loving the Avatar books centered around Kyoshi.
