I've heard people discuss how even one of these experiences can profoundly change one's worldview forever, and i find that fascinating. I'm not however looking for anything by self proclaimed "gurus" or mystics, that assume the mushrooms have spoken the truth in all its detail to them like some kind of prophet. I'm looking for sane, well-researched takes on what these experiences could mean or what they could tell us about life and the universe.
It just feels like its a hard subject to read about without getting into crackpot territory, but there has to be reasonable and curious people like me who don't just dismiss them as religious/druggie nonsense but who also don't veer off into hippie dippie land. I just want actual discussion and don't even mind theories that harken to the spiritual so long as it doesn't claim to have all the answers. I'm agnostic but also humble and understand that humans aren't the pinnacle of intelligence, so how could we possibly understand all the mysteries of the cosmos after having only being around for a tiny fraction of its existence?

I’d highly recommend How to Change Your Mind by Michael Pollan. Has excellent coverage of the most well-known psychedelics, his experience with them, the science behind how they work, and potential therapeutic applications.
