I would like to read more books about animals or creatures that focus on the realistic behavior of that animal. Specifically ones where the characters do not talk or think as how humans do. A few books similar to this I’ve read are Raptor Red and The Fox and the Hound.

I’m not sure if this is off-base or not, but “Joust” by Mercedes Lackey might work for you. It’s set in fantasy-Egypt, with dragon riders. The protagonist is a serf who takes care of dragons.
Lackey is a raptor rehabilitator, and it really shows with her depiction of animal behavior.
A Beautiful Truth by Colin McAdam…. although if you really want realistic, you’ll get it much more readily from nonfiction.

The animals talk to each other, but they don’t converse with humans. They can barely talk to other species. The story is about a group of them trying to find a new home. As far as animal behavior goes, it’s pretty realistic.
I just finished “Children of Time” by Adrian Tchaikovsky, much of which is from the point of view of sentient spiders. It was fascinating!
