The last series I read and completed a month ago is the book of the ancestor by Mark Lawrence. Absolutely adored the MC and her relationships with her friends.
Before that I'd completed A practical guide to evil and loved it as well.
I think I'm just looking for a lovable mc and cast of characters who are growing together and also on some great mission to avoid/fight against a great threat!
Others series that I've loved:
The cradle series
Main cosmere books
Faithful and fallen by John Gwynne
Licanius trilogy by James Islington (loved will of the many as well!)
Codex alera by Jim Butcher
Memory Sorrow and Thorn by Tad williams
Other preferences but not absolutely necessary: completed series and the presence of gay characters(romance not strictly necessary but a little is fun lol).

Michelle Sagara West Chronicles of Elantra,
Are you open to stand alone books? The Starless Sea by Erin Morgenstern is excellent, and features a gay MC.
Sisters of Jade, by James Downe. Last book in the trilogy is due out in… a few months, I think, so it’s basically complete. Not a lot of romance, but there’s a bit of les yay.
If you liked the codex alera read the Dresden files
{{The Fifth Season by N. K. Jemisin}}
The Bone Season series by Samantha Shannon!! It’s a high fantasy/sci-fi set in a dystopian England but it entails the whole world. It’s mythical, beautifully written, such lovable characters, and a slow burn romance subplot. There’s two more books to be released in the series, but it is my absolute favorite series ever, and she released newly edited versions of the books so far published- author’s preferred text. I could rave about them for hours!
Edit: demisexual FMC, gay/lesbian side characters, and pansexual MMC
The Last Unicorn by Peter S. Beagle
Dungeon Crawler Carl
Try any of the Vlademar books by Mercedes Lackey. Great world building and some of the best character development. I love them all but the last hearld mage trilogy is my favorite, Magic’s pawn, Magic’s promise, and Magic’s price. If you want a female main character look at the winds of fate or arrows books. She has a ton to pick from.
A Memory Called Empire checks all the boxes
