I like the multiple viewpoints of it and the numerous different plotlines all working together. And how some chapters can work as a more stand alone story all building up with the other ones. I also like how in later books more POVs are added to expand our knowledge of the world.

The Malazan Book of the Fallen series is exactly what ur looking for. Multiple POVs, huge world, lots of plotlines that connect later. Its actually bigger than ASOIAF. First book is Gardens of the Moon. Just know it drops u right in without explaining much at first but stick with it, everything starts making sense after a few chapters.
