Since you’re reading Wind and Truth, have you read the other cosmere Books? I just recently gotten started and really liked the Mistborn-Books (Era 1)
Ages ago I read, and liked, Terry Goodkinds “Sword of the Truth” books. It’s been a long while and I can’t really say if these aged well. But back then I liked them.
Daevabad trilogy by S.A. Chakraborty
The Passage. The Twelve. The City of Mirrors. I’m reading the first one now and it’s so good.
If you want to go for a dense multi-book story maybe Malazan Book of the Fallen.
Dungeon crawler Carl. You will love it.

Farseer Trilogy by Robin Hobb. Excellent world building and even better characterization. More people need to read her work.
I got a fantasy/sci-fi world for you with the lore to back it.
Try the Night Lords omnibus by Aaron Dembski-Bowden.
Or if you want a couple trilogies go for;
Horus Rising, False Gods, Galaxy in Flames then/or The First Heretic, Know No Fear, Betrayer. And Mark of Calth after that.
All set in the Warhammer 40k setting.

Malazan Book of the Fallen – Steven Ericson – most complex series I’ve ever read and I’ve read all of your list. Cant wait to re read it
