A well written book that's in a unique world, plot driven but without the focus being on romance/sex. Something you can just sink into. And preferable if it's a series it's finished or still plans to be finished. I don't like reading things that won't be completed.

Mage Errant is excellent.
So is Mother of Learning, and Art of the Adept.
Sabriel by Garth Nix. I’m not sure if this series is finished or not. When I read it, there were only three books and I thought it formed a nice, self-contained series, but when looking it up on Goodreads recently, I saw there are more!
Fortress in the Eye of Time by C. J. Cherryh. This series is complete.
I really like the magic system of Ben Aaronovitch’s Rivers of London series, and that man loves a good round of worldbuilding as well. It’s urban fantasy, nine volumes so far (tenth due this year) plus some graphic novels and a handful of novellas and short stories. It’s not completed but I have no reason to think it won’t be wrapped up eventually.
If you like Sanderson and haven’t already, read the Stormlight Archive series. It’s fantastic
