What is your favorite high fantasy book with deep world building?

Hello all. I have been in a reading slump since book 7 of Dungeon Crawler Carl came out. I’ve been looking for other fantasy/sci-fi but nothing has really captured my attention. Currently some of my favorite series are the Stormlight archives, Red Rising and the Dresden files. If anyone has any suggestions that have the general themes of these books present throughout them I would really appreciate it.
