I'm thinking of things like House of Leaves or Ship of Theseus which really won't work as a digital media due to restrictions of a tablet/e-reader or are simply better experienced as an actual book. I want to have a small library of physically interesting books.

The Neverending Story by Michael Ende- hardcover edition might fit the bill.
The Visual Display of Quantitative Information by Edward Tufte
This is more of a layout thing than genre, but Trigger by N. Griffin. I’ve also found that any books that incorporate illustrations (eg, A Wolf for a Spell by Karah Sutton or A Wolf Called Wander by Roseanne Parry) are a complete pain to read digitally.
History of the World Map by Map is one that i think the physical book is needed. It’s a very infographic book that tells some history in a fun way.
