The Sir Richard Francis Burton version. If you can find (and afford) original editions, you’ll get all his incredible footnotes, and the great wealth of his knowledge. His translation has been called eccentric, as he employs a weirdly archaic English, but he did so to emulate the rhythms and subtleties of the Arabic.

Mine is the one TRANSLATED BY Husain Haddawy BASED ON THE TEXT OF THE FOURTEENTH-CENTURY SYRIAN MANUSCRIPT EDITED BY MUHSIN MAHDI.

I copied this from the e-book so my apologies for the caps.
