My Ántonia by Willa Cather is set in the late 19th Century Nebraska and is my favorite of her books. She’s written a lot of others about pioneer farmers if you like that one.
If you don’t mind children’s books, Sarah Plain and Tall is a Newbery-winning novel that starts a whole series.
You might like The Indifferent Stars Above by Daniel James Brown? It’s about a woman in the Donner Party. It’s well-researched but harrowing, as you might expect.
Two Years Before the Mast is a classic memoir of a sailor talking about his time in the 1830s, and most of it is about the time at sea, but his discussions of California in the 1830s are superb and might be of interest to you.
