Dune by Frank Herbert springs to mind first. Not to everyone’s taste though. But I remember reading it a few years ago and seeing where Star Wars got a big chunk of inspiration from (or felt it did!)
I’ve not looked into much sci fi like this yet but got some good recs for space operas the other day that could be worth checking out:
Sun Eater series by Christopher Ruocchio; Ancillary Justice; The Vorkosigan Saga by Lois Bujold; Gideon the Ninth.
Maybe even the Enders Game series! (More military sci-fi)
