Popular answer maybe, but the Court of Thorns and Roses series, I read some of the 700 page books in a day or two.
The Ember in the Ashes by Sabaa Tahir series is even better and does not have spicy scenes. Incredible plot and character development. The world building is so cool and it kept me hooked through every book.

The Trees by Percival Everett. It’s got a bit of a sci fi tone. I’ve described it as True Detectives (season 1) meets X-Files meets historical reconning. I read it in a day. Could not put it down.
