Coming to the end of a re-read of Discworld and I could really use some absurdist, rollicking books that still have good plots and writing. Also love Douglas Adams and used to really enjoy P.G. Wodehouse. I don’t much like cozy literature, and prefer genre fiction (sci-fi, fantasy, thriller, mystery) but open to anything. Bonus points if the author isn’t a white man, and I can expand my humor cannon a bit

How about ringworld?
Have you tried Tanya Huff yet? I have a big soft spot for her Valor series especially, but all of her work is a good read.
Myth INC. Robert Lyn Asperin. Spellsinger. Allen Dean Foster not as humorous but definitely fun. The Dortmunder series. Donald Westlake is sorta like Charlie Brown and the gang become professional thieves when grown up.
