I know this is a weird request, but I love the one-bed/forced proximity trope. I love the awkwardness, the secret pining, the accidental cuddling. But I don’t really love when it immediately turns into smut. I’m a slow-burn, fade-to-black gal. Any chance there are books out there that fit this? Thank you!

Yours Truly by Abby Jimenez might fit the bill if you’re ok with a low level of spice. It’s not completely fade to black but it’s not smut.
The Flat Share by Beth O’Leary has specifically one bed that both mcs sleep in
Ok this might sound weird, but The Left Hand of Darkness is (among other things) the best love story I’ve ever read. The most beautiful part of it has the two protagonists sharing a little tent through a long journey across a very inhospitable landscape and coming to realize their feelings for each other. No smut, intense attraction. Warning, though – it will break your heart.
If LGBTQ novels are an option, then Ten Things that Didn’t Happen by Alexis Hall is a good one. It takes a while to pick up steam, as it were, and the sex scenes are pretty tame (i.e. they stop before they get really graphic).
