Hi all! I would love to learn more about cooking, like the basic truths – about using oil, herbs, boiling things. I grew up never having to cook (not rich, just a bit of a controllive mum who wouldn’t let anyone in the kitchen) and I’d like to know some theory! I’m looking for a book that maybe explains some of the chemistry and reactions between ingredients, how to use heat and acid, etc. I’m currently travelling/backpacking and can’t really practice much but I’d love to learn by reading on the road. Have a STEM degree and can take in depth explanations. Thank you!
