Any book. Find one that has a subject you find enjoyable so you have motivation to finish it.

HP Lovecraft tends to have more complex language without the stories themselves being confusing! I used to print out and highlight Lovecraft stories in high school to learn new vocab! 🙂 All his stuff is public domain and free online, in text and you can find a lot as audio as well.
