My dad’s been caring full-time for my mum since she had three rare strokes. (He’s my hero! Mum was in hospital for 6 months, ICU for 2 and slept by her side in a CHAIR every night for the whole 6 months).
He’s always been great with cleaning and house stuff, but she loved cooking so he never really did it.
But now mum’s home and he’s been cooking for about a year and a half and he’s doing amazing, he moved from chicken and veg to curries (Patak’s kits) and even a risotto. I’m super proud of him and want to get him a cookbook as a gift.
Looking for:
• easy but not “beginner/kids” level
• not loads of weird ingredients or fuss. He lives in a country where access to this would be tricky.
• recipes without pages of life story first, simple is best
• less fish if possible (he hates it 😂)
Cute note: They’re celebrating 50 years married this year! They’re incredible and my mum is doing so well and despite doctors saying she’d die, she didn’t and is nearly back to herself again. I put that down to my dad’s amazing care!
tl;dr: Need a straightforward but not too basic cookbook rec for my dad (newish cook, hates fish, no faff).

Look up Recipe Tin Eats. She has a few books. They range from super simple to a bit more advanced. Utterly delicious. We have never had a failure, either in terms of how it’s cooked or kids turning their nose up at a recipe. Totally unpretentious, just excellent food.
Not a cookbook, but free, online, and I found it helpful learning to make things like meatballs from scratch and how to up my taco game.
I don’t know that I would recommend using the service anymore because the quality of ingredients declined a lot during the pandemic and I don’t know if they recovered but all the recipes are available online for free and they have basic instructions along with pictures. I think they have a pdf version you can print out that’s front and back. If he really likes it you could get in laminated so it doesn’t get dirty while he uses them.

There are some things like they have their own Tex-Mex sauce mix but for the most part you can find an easy substitute at the grocery store for most things like their spice mixes or sauces.
