Tamora Pierce has multiple digestible fantasy universes to dive into that each have several multi book series.
Garth Nix has a variety of series for a variety of YA ages, the Old Kingdom series starting with Sabriel is one I find myself going back to every few years.
A little older I think The Locked Tomb series is fine for younger audiences but can be complex. First book Gideon the Ninth.

Without question: Shattered Sea Trilogy by Joe Abercrombie!
They are three books that share the same setting and some of the same characters and could be standalone stories … so if u had to choose one I think book 2 is by far the best:
