I recently got into audio-books. I prefer old classics, only because i figure bad books would not survive 100s of years. So i got nothing against new books but there is so much being published its overwhelming and probably hard to find the great works among them.
Anyway my favourites so far are Don Quijote, many short stories by Tolstoi, Heideggers Experiment, a book about Magellan circling the earth by ship. I also love Mark Twain & Shakespear
For me, its not that much about genre or topic, but the way it is written. I love those little remarks / details some writers throw out there almost as offhand remarks, details that add richness. 1 liners that paint a whole picture, they add it as if it doesn't mean much but in a way it makes the whole book – to me

The Count of Monte Cristo, The 3 Musketeers series, Captain Blood . Yes it is a classic. Pride and Prejudice. Modern writers who write classics. Pat Conroy, Larry McMurtry. No he doesn’t just write westerns. John Irving.
You have a lot of men on your list. Might I suggest wuthering heights and Rebecca (my personal favourites), or Jane eyre?
If you like Tolstoy you may also like Jane Austen.
I also personally prefer Dostoyevsky over Tolstoy, so maybe check him out too? Crime and punishment or the brothers karamazov are pretty popular.
The count of monte Cristo is also a really good older novel. You may also enjoy dickens, Wilkie Collins (the woman in white is good), or Sherlock holmes.
I’ve literally thrown everything from detective fiction to romance at you, so I apologise for the wide spread, but I enjoyed the writing in all of these
