If you’re rooted to US/UK agencies, John Le Carre is the gold standard (*Tinker, Tailor, Soldier, Spy* and *The Spy Who Came in from the Cold* being his most well known).
If you like darker spy novels and are open to moving away from US/UK intelligence, Daniel Silva’s Gabriel Allon books are incredible. The focus is Isreali intelligence (though there is plenty of interaction with the Western agencies).
