I've been really into medieval stories But i don't find Books I really like. I'd like a book that includes a lot of action, with a male protagonist that's set in a fantasy world. preferably not very gory and a very small plot about romance, And if possible there's a scene/story arch about saving someone or themselves. Sorry if I'm being to specific.

If you become more comfortable with the gore/horror (or more desperate), *Between Two Fires* is great. Definitely not a typical fun story about a knight though, much darker.
Novels involving traditional knights are oddly hard to come by in fantasy. The main one that comes to mind is one thst does include gore but also draws a lot of Arthurian influence, **Traitor Son Cycle by Miles Cameron**. Written in a very medieval Europe adjacent fantasy universe that portrays a very historically accurate version of the medieval chivalry code. Combat is some of the most historically accurate you’ll find in the genre.
If you’d like some medieval historical fiction by the same author, there is the **Chivalry** series which he wrote under Christian Cameron.
Beyond modern fantasy, have you checked out **The Song of Roland** or **Sir Gawain and the Green Knight**?
There is also a series I havent read yet but is on my to-read list that you might want to try out: **Ordination by Daniel M. Ford**
Have a look at Vengeance and Honour by Ben Dixon. It seems to fit your brief with a knight and his friends on a rescue quest mission. It’s a fast-paced book with action, magic, humour and great characters. Medieval fantasy setting with a MMC who has to redeem himself along the way. It’s an excellent story.
