I’ve been rewatching The Hobbit and LOTR, and now I’m desperate for a good fantasy book/s that will draw me into the world, one with different races (elves, dwarves, etc) or creatures, and characters that you get connected to, something that i won’t want to put down
can be standalone or a series!

Tolkien really popularised a lot of these worldbuilding elements, so a lot of the genre will be rather derivative, but R. A. Salvatore’s work might be of interest.
I found Vengeance and Honour by Ben Dixon to be as you describe. The different races, a fast paced and gripping read. Currently stand alone, although I believe another is on the way.
