It’s YA but Tamora Pierce’s Song of the Lioness (girl disguises her sex to train to be a knight), Immortals (girl becomes a mage), and Protector of the Small (first girl legally allowed to train for knighthood) quartets all fit the bill. Protector of the Small (the Keladry books) holds up especially well as an adult, imo.
The Green Rider series by Kristen Britain could also work. More adult fantasy that gets darker after book 1, follows the main character in her adventures as a green rider (the king’s messenger service). It’s not a completed series yet though.
