My favorite kinds of games are Skyrim and Cyberpunk. Skyrim for it's medieval fantasy and story, and cyberpunk for it's gritty and dark storytelling.
I like fantasy a lot. Not looking for kiddy stuff, but also against NSFW or stories with smut. I like zero to hero stories a lot.
Was thinking of getting Mistborn: The Final Empire and see if I enjoy it. Any suggestions?

You’re 100% describing Misborn and it’s a great series.
For cyberpunk, Neuromancer by William Gibson – started the genre
The correct answer, as it always is, is Dungeon Crawler Carl. For RPG gamers, this is the absolute pinnacle.
The Sanctuary Series by Robert J Crane. As a Skyrim fan myself, this series is very like the game: usual fantasy races, guilds, dragons, gods etc. Lots of action, little bit of romance but not smut, fun characters. Over 10 books if you enjoy it. Highly recommend
Fantasy Recs:
*The Farseer Trilogy* by Robin Hobb is (imo) some of the best High Fantasy out there.
*The Goblin Emperor* by Katherin Addison is a standalone novel but I had a lot of fun with it. I’d call it fantasy adjacent but it’s definitely a zero to hero story
Cyberpunk:
*Neuromancer* by William Gibson is required reading
The Remnant’s of the Light by Kirk Mann is something I recently read – found it in my local B&N.
I think it fits the Skyrim vibe your going for. If you end up looking into it, I’d love to hear your thoughts!
Besides dungeon crawler Carl, I think you should give Hyperion a try! It mixes cyberpunk and sci-fi and fantasy all together!
Besides Dungeon Crawler Carl, another good option could be Ready Player One.
Have you read any R.A. Salvatore? Highly recommend The Legend of Drizzt series! And the Brandon Sanderson Mistborn series is excellent but I liked the Stormlight Archive even more. Still, you can’t go wrong with either. Otherwise The Expanse for epic world building but this is SciFi.
Edit: a word
Mistborn is good, but the answer to your question is “Dungeon Crawler Carl”
