Quite specific, I know!
I'm looking for a book (preferably non-fiction, but fiction would probably help too) that elaborates on how behind-the-scenes wait staff support really worked in huge expensive apartment buildings and how it all functioned. Back staircases, doorways only used by staff, completely different rooms or floors for staff to reside in? Especially how dumbwaiters worked to deliver meals from the main restaurant/kitchen. Were dumbwaiters shared between apartments? Were there 'communal' dumbwaiters that were only in the staff areas and meal deliveries were labeled to the apartment and the 'help' would retrieve it?
This could be more of an architectural/historical book too, or a book on "The Fancy-Pants Residential Buildings of City X".
