check out “the priory of the orange tree” – dragon fantasy with wlw romance and the villain situation is *chef’s kiss* complex, plus some characters definitely have that unhinged energy you’re looking for

You might have already read it – it’s pretty well known. The main character isn’t actually a villain, but he’s described as quite unattractive, and his way of speaking especially what happens at the climax – can definitely make him seem like one. Jane Eyre

There’s also a character struggling with mental illness, which makes the whole situation even more complex
