Book about some sort of outbreak with heavy focus on the early days

I love the stories about some world altering situation like zombies or a deadly pandemic. I always find the very early part interesting where the situation is developing and everything is chaotic.

Sometimes the early part gets skipped and then it flash forwards like 10 or 20 years later.

Any recommendations?
