Any Murakami, John Higgs, Borges, Stephen King book I would say in one go.
If you want thought provoking and immersive, The Overstory is worth a look. Big ideas but still very human.
For nonfiction, maybe Thinking, Fast and Slow. It pairs well with The Psychology of Money and kind of messes with how you see your own decisions.
For me, I Who Have Never Known Men by Jacqueline Harpman provoked a lot of deep thoughts regarding what it means to be human and free.
