I’m looking for non-fiction books that are about niche topics, but are also super informative and enthralling. Basically anything that my first reaction would be “I have no interest or knowledge about this”, but quickly changes my mind.
It could be history, language, business, mythology, science. Any topic at all, really.

I recommend you check out books by John McPhee. Pretty all his books fit your category, and he wrote on a wide variety of topics. Some of my favorites are The Deltoid Pumpkin Seed, The Curve of Binding Energy, The Control of Nature, and Oranges.
