So I don't read much fantasy but I have really been itching for it lately. I recently read The Raven Scholar and LOVED it so anything in that vein is what I am looking for.
What I really enjoyed about it was that most of the characters were in their 30s or older. It was really refreshing. I know a lot of people say the characters in that book don't act like they are "older" but I do personally disagree (to an extent lol there are moments where some characters read younger). I am 34F and I found the characters in TRS relatable.
Every book I find that is compared to TRS, and the genre as a whole, seem to all be characters in their early 20s. The books I usually read are contemporary, literary or thrillers with "older" characters.
Some fantasies I have enjoyed:
LotR
The Raven Scholar
The Poppy War Trilogy / Babel / Katabasis (I am a RF Kuang girlie)
Things I am not interested in:
Romantasy – I don't mind a romance plot but I don't want it to be the main plot
Dune/ Wheel Of Time – pls no
Long series – max 3 books and that's pushing it. Standalone preferably

NK Jemisin writes characters so well, and her best all seem to be at least middle aged. Broken earth trilogy is my favourite. The great cities if you fancy a duology
The first two books (publication order) of Bujold’s Five Gods series both have protagonists who are mid-30s or older. The Curse of Chalion and Paladin of Souls. Most of the books in the series are only loosely connected, so they don’t necessarily need to be read in order.
