I love love love everything by Yahtzee Croshaw and Jason Pargin. Their books are so….weird! In the best ways – hilarious, fantastic, and so different from everything else I've read. They have such well developed plots, crazy characters (shout out Dr. Diablerie), laugh out loud moments throughout, and have great payoffs at then end. They do all this and manage to never seem to take themselves too seriously – which I maybe my favorite thing about the books in general.
Anyway the well has run dry so hoping someone can recommend some good ones like these.

Have you ever tried the Discworld series by Terry Pratchett? I’d suggest starting with Guards! Guards!
Dungeon Crawler Carl is what you need. Jason Pargin even just compared it to JDatE.
Tales From the Gas Station would probably work as well.
Tales from the Gas Station is probably the closest vibe. Weird and funny but still kind of grounded.
There’s one called A Fair System, Probably where it’s the end of the world, but it runs through a front desk. It doesn’t take itself too seriously but also has a weird vibe.
Also The Hike by Drew Magary also scratched that itch for me. Starts normal and then just keeps getting stranger.
