I love this movie to the moon and back. I watch it all of the time. I love everything about it, especially how it portrays religion against that of holiness/goodness. I love the timeline, the way they speak in a believable manner of the time, the different cultures presented, etc etc. Do you guys know of any books that have either 1) the same tones (it doesn't have to be historical) or 2) books set in this timeline or similar that are like the movie?

Bernard Cornwell’s Grail Quest series might be perfect for you – it has that same medieval atmosphere with complex religious themes and great battle scenes. The characters speak in authentic way that feels period appropriate without being too heavy
Also try “The Pillars of Earth” by Ken Follett, it’s bit earlier timeline but captures similar feel of politics mixing with faith during crusades era
