I’m really in the mood for a story with extreme displays of magic, or just very very strong/significant systems. I’m not even sure how to explain it better. The magic system doesn’t have to be too complicated or very rule-oriented.
My only point of reference would be the Cradle series, where certain characters could probably make a mountain disappear with little to no effort. Obviously I don’t need it to be that drastic, but something more epic in proportion than the usual.
Sorry, I know it’s a really weird request and I’m unable to put it into words properly.
Otherwise, I usually prefer a good balance of plot and well-written characters, leaning more towards plot.
I’ve read all of the Cosmere, Gentlemen Bastards, Cradle, Red Rising, Six Of Crows, and others.

The Stormlight Archive has some absolutely insane magic displays once you get deeper into the series – like entire armies getting yeeted by single characters. Also maybe check out The Poppy War trilogy if you want magic that’s literally apocalyptic in scale, though fair warning it gets pretty dark.
Malazan Books of the Fallen. The second scene of the first book is a giant mage battle. It has my favorite magic system and some gigantic magical scenes. It’s more vibe based but makes sense in the context of the story.
Poppy War also has some crazy magical scenes and is very good.
Riftwar Saga is great and has big magic.
