Slow romance and slice-of-life in a fantasy setting, with more than one book

Hello! I am looking for something that may be perhaps a bit specific. I really want to read a light-hearted adventure fantasy with a slow-burn romance that takes more than one book to develop (the romance doesn't need to be the main point), ideally with a female protagonist aged 20+.

I haven't actually read something like this before and don't really know what to search for (hence the post) but the closest comparison I can make is maybe something like Frieren but as a novel, or Shadow of the Fox by Julie Kagawa.

Elements of interest are nuanced character building, wholesome interactions, beautiful scenery, overcoming past traumas, and finding hope despite hardships.
