“Rain: A Natural and Cultural History” Cynthia Barnett. It’s non fiction but reads like poetry.

Water Bodies by Laura Paskus – collection of essays and poems about how people relate to the bodies of water around them
The Secret Knowledge of Water by Craig Childs – about searching for water in arid environments
Ocean: Earth’s Last Wilderness by David Attenborough and Colin Butfield – explores the oceans ecosystem and interdependence
Eta I’ll also suggest What if We Get is Right by Ayana Elizabeth Johnson – deals with climate change overall but has some fascinating interviews about oceans and ocean farming

Both of these are about free diving if you’re interested in that:
Deep by James Nestor – on free diving and lots of interesting information about a number of ocean related topics
The Dive by Pipin Ferreras – controversial considering what happened. There’s also a documentary that’s really good

Coming at you from a slightly adjacent angle, my rec would be
****Other Minds**** by Peter Godfrey-Smith. It’s main focus is on Octopus so naturally, water is rather nearby even though it’s not always the primary focus.
He’s a Philosopher by trade and has done a lot of diving with Octopus ajd he also weaves some interesting ideas about the birth of consciousness into the book!
