Our 6 year old loves reading and has finished a number of series targeted at younger readers (Dragon Masters, Magic Treehouse, Rainbow Magic). Other faves include Dragon Girls, Dragon Games, Zoey and Sassafras, Last Firehawk, Alien Next Door, the Questioneers, Secret Explorers, Dragon Storm, and the Wild Robot series.
He recently tried the Wings of Fire series (probably the most advanced one he's read so far) and he got about halfway through the first book when we realized it was way too violent for him (something about a character getting their face melted off 😬).
He seems ready to try something a bit more complex but we're probably going to keep running into stuff that's also too mature for him.
Anyone have any recommendations? He loves anything with dragons, fairies, magic and adventures.

Alvin Ho books by Lenore Look
Chronicles of Narnia maybe? My son also enjoyed a lot of Roald Dahl when he was about 7. The Tale of Despereaux is great and some of the other books by the same author were enjoyable, but I didn’t read many of them.
Enid Blyton. If he doesn’t mind a female protagonist, the Cam Jansen books.
