By Platonic I don't mean "they love each other but they just don't have sex," I mean in the truest sense of the word – the ideal of what friendship should be. Books where relationships built on love, loyalty, support, honesty and mutual respect are the center of the story.
I am an incredibly avid reader, and so I may need some off the beaten path suggestions. A few books which had the types of relationships I like to read about:
Bleak House – Esther and Ada
Great Expectations – Joe and Pip / Pip and Herbert
The Woman in White – Laura and Marian
Dracula – All of the characters that aren't romantically involved with each other
Lonesome Dove – Gus and Cal
Pillars of the Earth – Prior Philip and Tom Builder (there are several other awesome platonic relationships in this book, as well)
The Silence of the Girls – Achilles and Patroclus
