I haven’t read a book since I was a kid (now 30). I really want to get into reading for two reasons, to improve my terrible vocabulary, and to help my sleep hygiene as I’m currently addicted to watching YouTube at bedtime and struggle to sleep.
I have bought books, tried and failed to read them because I found them all boring. This includes; Girl with the Dragon Tattoo, Gone Girl, Lee Child / Jack Reacher, 1984, Lonesome Dove, Thursday Murder Club, the Firm, IT, and a few others.
Any recommendations..?

You’ve tried a bunch of novels. Try something different. This could mean many different things:
1. Nonfiction. What are your other interests? Science, politics, history? Find a popular book on the subject and try that. Or try a biography of someone you admire or have an interest in.
2. Poetry. Poems require a different sort of reading than novels, focusing on short bursts of language and meaning rather than a long narrative, and they’re great for building vocabulary because the language is carefully chosen. Buy a “100 greatest poems everrrr” kind of anthology. Each night, read 2 of them and decide which you like better. Then explore from there.
The Beach.
Listening to audiobooks (free from many libraries) might be a good transition from YouTube. It also means you can turn off the lights and close your eyes.
