I want to get more into reading but have never really found anything that could hook me like video games and manga. I often feel a great sense of emptiness after finishing a great story, because I know that I will never be able to experience that story and characters the same ever again. So any book recommendations that have left you feeling like that are greatly appreciated. I like stories like The last of us, Kingdom, Berserk, The climber, FF7, even romance

Have you tried something like Fighting Fantasy? They’re “playable” books with multiple ending, a set of rules for “winning” and characters. Some of the very best have multiple endings, multiple storylines, and really rich backstory.
You can just read light novels, basically anime/manga but book. Moshoku tensei is apparently really good. Monogatari series is praised a lot as well.
They also have manga panels for some stuff, or at least art (don’t expect to see a lot of these, they are rare within books I think, most books have them but sparingly)
Progression/litrpg is what you want. Check out He Who Fights Monsters or The Ripple System (latter is straight up an MMORPG). There are a ton of great ones, many use leveling systems for power growth.
Manga is a book.
But if you want simmering else why not read the light novels put out by manga publishers – often turning manga into novels.

Otherworldly by Jason Segel is about a gamer traveling through a dangerous and actual life threatening VR world to find his childhood best friend/crush. I’m not sure if it’s exactly what you’re looking for but give it a try. The main character is hilarious and has a strong personality.
