I tend to lean towards sci fi, so ideally the settings would be in these areas, otherwise, does anyone have any good recommendations of fiction books in general that take places on those continents?
I’m to branch out from North American authors/settings/stories.

*Battle Royale* is dystopian japanese novel and it’s really interesting.
Walled City by Ryan Graudin. Set in a fictionalized dystopian version of Hong Kong
Macunaima by Mario de Andarade, a classic Brazilian fantasy based on Amazonian myths and legends.
Nnedi Okorafor writes African futurist novels. I’ve only read her Akita series, but Binti is next up on my list.
“Shantaram” and “A Suitable Boy” are both set in India.
“The Poisonwood Bible” is about missionaries in Africa.
If fantasy is on the table here are a few I enjoyed.

City of Brass – Egypt/Middle East
Jade City – Fictional SE Asian Island
All You Need is Kill by Hiroshi Sakurazaka is military SF set in Japan. It’s about a fresh out of boot camp private who is killed in his first battle against the aliens invading Earth, only to find himself in a time loop.
Another by Ayatsuji Yukito is a horror mystery set in Japan. Koichi Sakakibara moves in with his maternal grandparents due to his father working abroad. Joining his new class after having been hospitalized, he quickly discover some oddities about it. Namely, there is one student who no one acknowledges and soon after, classmates start dying in freak accidents.
