My favorites:
Lord of the Rings by J. R. R. Tolkien.
Wheel of Time by Robert Jordan.
Cosmere by Brandon Sanderson.
Inheritance cycle by Christopher Paolini.
Kingkiller Chronicle by Patrick Rothfuss.
Riddle Master trilogy by Patricia Mckillip.
Licanius trilogy by James Islington.
Not a fan of things like Asoiaf and First Law.
Any ideas?

Farseer by Robin hobb seems right up your alley
The Black Company by Glenn Cook is excellent and I’m not a huge fantasy reader

The Belgariad series by David Eddings.
The Fitz and Fool books by Robin Hobb. Start with the Farseer Trilogy: Assassin’s Apprentice, Royal Assassin, Assassin’s quest. If you like them, move on to the Liveship Traders: Ship of Magic, The Mad Ship, Ship of Destiny. Then the Tawny Man trilogy: Fool’s Errand, The Golden Fool, Fool’s Fate.
