Suggest me non-YA book(s) that are gripping like the Red Rising series or Project Hail Mary

I don't mind the occasional YA book, but as soon as I read that the protagonist is like 19, I'm usually out. I just expect that book to be written for a younger audience. Looking for grown human Fantasy or Sci-Fi preferably, but willing to branch out. I'm looking for your rating of at least 4.5/5 stars on this book.

• Hunger Games (technically TA, I know, but it's got maturity)
• Angels and Demons by Dan Brown
• Red Rising series by Pierce Brown
