The Imitation of Christ by Thomas Á Kempis is a good one. Also, there is The Ladder of Divine Ascent by John Climacus and The Ascent of Mt. Carmel by John of the Cross. They were Catholic, but while being Protestant, I found them insightful. I liked The Crucified Life by A.W. Tozer as well.
