I’m guessing fantasy is your thing, so… *The First Law* series by Joe Abercrombie is a safe bet. There’s also *The Wheel of Time* by Robert Jordan. And it’s not strictly in the fashion of Game of Thrones but I love *The Black Company* by Glen Cook and will recommend it endlessly

Malazan Book of the Fallen is going to be right up your wheelhouse. There’s just a TON of characters though. You’ll need to keep notes.
Brandon Sanderson’s stuff. Specifically the Stormlight Archive.
You should give Dennis E Taylor a shot. The Bob series is fantastic.
Craig Alanson’s Expeditionary Force is also great, if you’re into Military Sci-Fi with a lot of “Main Character pulls a white rabbit out of their ass to solve an unsolvable problem.”
