I enjoy Norse culture and Norse mythology, but I also like reading about new worlds that the author has come up with rather than using real world mythology as a premise. Essentially I would like books that take inspiration from Norse myths but that don’t actually involve the actual gods of Norse mythology, an example being The Shadow/Hunger of the Gods which I am currently reading.
Of course since I am looking for fantasy books specifically I mean books that also involve magic, witches and wizards and the like.
I’m ok with dark fantasy too, as long as SA isn’t involved.

Have you read American Gods?
As a dane I can recommend the childrens book trilogy Erik and The Gods.
If you’re open to novels aimed at a younger audience, perhaps try The Cry if the Icemark. The titular nation is definitely Norse inspired. Quick summary: fantasy vikings fight fantasy romans with the help of vampires and werewolves and snow leopards (oh my)
